Tip for making perfect stuffed pancake with non-stick pan at home

1. How to make stuffed pancake with non-stick pan

Ingredients:

+ 400gr Taky stuffed pancake mix flour

+ 250 gr minced meat (not too finely) 

+ Cooking oil

+ Cat's ear

+ Thin-top mushroom

+ Onion

+ Clove

+ Sauce: fish sauce, salt, seasoning

+ Water

How to make Stuffed pancake - Step by steps: 

Step 1: Mix the flour

- If using ready mix, you should mix 400g flour with 1 liter of water (note: when using ready mix, you should get more water to prevent dough from thickening, for example: 400gr poder pack require 700ml of water, we mix up to 1 liter water). Then, let flour soak about 3-4 hours. Every 2 hours, squeeze out the clear water and replace it with fresh water. After soak, add 1 teaspoon of salt, 1 tablespoon cooking oil and mix it together. (You can buy Taky Vietnamese stuffed pancake at supermarkets).  

- Mix flour in traditional way: mix rice flour with tapioca starch, if you want tough cake, mix tapioca with 1/2 rice flour. If you want soft cake, mix tapioca with 1/3 rice flour. Mix flours with 1 liter of water, 1 teasoon of salt, 1 tablespoon of cooking oil, let the mix rest for 2 hours.

Step 2: processing the kernel

- Clove are sliced in vertical, frying it and pour out on paper to absorb oil and let cool 

- Cat's ear and thin-top mushroom deep in water to make its soft, diced onions

- Minced meat with salt, fish sauce, seasoning, pepper in 5 minutes. 

- Put the non-stick pan on the tove, add 1 little bit cooking oil, add the onions first, then minced meat, finally add the mushroom and cat's ear, stir it up in 30 seconds and turn off the stove..

Step 3: Make stuffed pancake with non-stick pan

- Set the medium heat (not too big, not too small) 

- Prepare a standard non-stick pan, spread cooking oil around the pan 

- Wait for moderaly hot pan, add 1/2 tablespoon of fluor into the pan, holding the pan evenly around the pan. Cover the pan and wait for 15-20 seconds.

- When you see the pancake is cooked in, turn the pan upside down on the plate/ cutiing board that has been spread with cooking oil. This will help you roll the pancake easier.

Bước 4: Pha nước chấm

3 muỗng canh nước mắm, thêm 1 muỗng canh giấm và 2 muỗng canh đường hòa tan trong 1 cái chén, 1,5 thìa nước lọc, sau đó mới cho ớt, tỏi, đu đủ xanh thái lát mỏng vào.

2. 6 lưu ý khi tráng bánh bằng chảo

Không để chảo quá nóng mới tráng bột

Khi chảo quá nóng, bột sẽ bị chín nhanh,  bánh khô, dễ bị rỗ và cháy, khi cuốn sẽ khó và về mặt thẩm mỹ bánh cũng không đẹp mắt.

Không để chảo quá nguội mới tráng bột

Khi để chảo quá nguội, bột sẽ "chạy vòng vòng" quanh chảo mà "không chịu chín".

Không phết quá nhiều dầu lên chảo

Khi phết quá nhiều dầu lên chảo, bột bánh sẽ không tạo thành 1 khối phẳng đồng nhất mà dễ bị rỗng ở giữa.

Không để bánh trên chảo quá lâu

Bánh sẽ bị nổ, bị chín quá và ko được trong, lúc này chảo sẽ nóng, lần đổ tiếp theo sẽ khiến chiếc bánh sau bị chín nhanh và "tai nạn" làm bánh cứ thế lặp lại cho các lần tráng tiếp theo.

Dùng thớt để chứa bánh sau khi tráng chín

Theo kinh nghiệm làm bánh lâu năm của nhiều người, muốn gỡ bánh chín ra khỏi chảo nhanh thì nên dùng mặt thớt gõ ra, không nên gõ vào đĩa, vì mặt đĩa không phẳng, gõ mạnh và dứt khoát dễ vỡ.

Cách gỡ bánh ra khỏi chảo mà không bị nhăn/gập bánh. 

Bạn hãy để ý, bánh khi chín đủ độ, thành bánh sẽ tự bong ra khỏi chảo, lúc ấy, bạn nhanh tay gõ dứt khoát bánh xuống mặt thớt hoặc đĩa lớn, nếu khó quá, bạn dùng đũa gỗ khẽ nạy 1 vòng quanh thành bánh, bánh khi úp xuống sẽ dễ dàng hơn.
