1. Raw materials for making fresh bread (finished products 5-6 pieces)
- 400 gr of Tai Ky multi-purpose flour
- 6.5 gr of brown yeast (ie yeast for bread)
- 7 gr of sugar
- 3 grams of salt
- 180-200 ml of warm water
- 25 gr of cooking oil
Note when choosing ingredients:
+ Can replace multi-purpose flour with flour for making bread. However, it should be noted that Tai Ky multi-purpose flour absorbs less water, so it may be a little less water to avoid being dough when kneading.
+ You can replace warm water with warm unsweetened fresh milk or a mixture of half water and half milk and then warm. Using milk will make the cake more fragrant.
+ If you use fresh milk with sugar, the amount of sugar in the ingredients should be reduced.
+ Can replace butter for cooking oil, if you use butter, the cake will be more fragrant, the crumb will be more yellow.
2. How to make fresh Vietnamese bread
Step 1: Mix the flour
- Put all of the above ingredients in a large bowl and knead well. Try to knead the dough until you get a smooth, supple, elastic mass that is slightly wet, but not sticky. The powder can now be pulled into a thin film.
Note: Each powder has different water absorption, so be careful when doing. If the dough is too wet, add a little dry flour, but if the dough is finished, it is too dry, and if it doesn't reach the above elasticity, add a little water or milk.
Step 2: Incubate the flour
- Then, spread a thin layer of oil in the bowl and place the dough to help the dough stick. Cover the dough with a damp cloth and keep the dough in a warm place like in an oven with lights on for about 45-50 minutes to double the dough.
Step 3: Roll the dough
- Divide the dough into 5-6 small portions. Then roll the dough to the length and then roll the dough. Try to stroke the ends of the small piece of dough in the middle to enlarge it.
Step 4: Bake the cake
- Put the dough on a tray lined with oil paper or a long tray as shown in the picture. Incubate 20 minutes for the cake to expand.
- Now spray water on the cake and use a sharp blade to cut straight or diagonal on the surface of the cake dough as you wish.
Note: It is recommended to make a few slices and each sugar is about 0.5-0.7cm deep because the cake is still blooming after baking.
- Oven preheats 185 degrees C 10 minutes before. Then put the cake tray in the middle of the oven, bake for about 20-25 minutes to make fragrant golden cake. Turn off the oven and take out the cake.

Note when making bread
- If using dry yeast, warm water should be used to stimulate the yeast to create a baking powder. Bread yeast also known as Dry Yeast. This is an important ingredient, not to replace it with baking powder or baking soda (ie baking powder or baking soda).
- The dough needs to be hatched in order for the bread to be delicious. So need to incubate the powder in a warm place.
- In order for the bread to expand, you also need to make a deep incision with a sharp blade.
- The amount of water when making is not fixed due to the type of flour you use and the kneading process. If the dough becomes dry, add more water. If you use a multi-purpose flour that absorbs less water, you must reduce the amount of water.
