Unique way of making Gan cake of the Southwest people

The Southwestern region has a very unique specialty dish which is the Gan Cake. Not using the main ingredient is pork liver, the way to make Gan cake is mainly based on duck eggs with the aroma of coconut milk, the sweetness of jaggery and the strong smell of star anise.

Gan cake is a cold cake because after it is cooked in the oven, people have to preserve it to cool to taste it. It is both a snack and a delicious dessert that has an extremely appealing taste. However, the way to make Gan cake is only popular in the Western provinces, but people in other regions have never heard the name. Materials to prepare:

- Duck eggs: 10 fruits

- Desiccated coconut: 1/2 kg

- Jaggery: 300grams

- Taky rice flour: 40gram

- Bitter cacao powder: 1 teaspoon

- Anise: 10 flowers

- Cooking oil

- Tools: bowl, cage, oven, baking mold, basket, ....

Instructions on how to make Gan Cake:

Step 1: Buy grated coconut washed and squeezed out about 1 cup of coconut milk and a bowl of coconut paste. Add rice flour to a cup of coconut milk and mix well to avoid lumps.

Step 2: Break the duck eggs into a bowl and use a whisk to beat properly. Add the mixture of coconut milk and rice flour to beat until dissolved.

Step 3: Turn on the stove, put coconut paste in the pot with anise and jaggery to boil to dissolve sugar, turn off the heat and let cool.

Step 4: Add the mixture in step 2 to the coconut water has just cooled and stir to dissolve. Filter the mixture through a sieve to remove residue and impurities.

Step 5: Put the prepared mold on the stove to heat up and get some oil to sweep the entire surface. Use a pore with small holes to pour the mixture into the mold.

Step 6: Turn on the oven at 175 ℃ before about 10 minutes and put the cake mold into baking for 60 minutes to make it cooked.

Step 7: Cook the cake out of the oven and let it cool, put in the fridge for 4 hours or overnight. When eating just cut the cake and enjoy.

Note when making Gan cake:

- In addition to using duck eggs, you can use chicken eggs instead.

- To make small holes, you need to wait for the oil to boil and then pour the mixture through the jar. This essentially exposes the dough to high temperatures and boils to create a stomata.

- Instead of baking powder, you can also use tapioca flour to make the liver cake more porous and more uniform.

When enjoying the Gan cake here, you will be a little chan with a little white coconut milk fat. This is the secret to make the cake more fragrant, softer and more sweet.
