How To Make A Special Delicious Fried Chicken Egg

Ingredients for chicken eggs

- 280g boneless chicken, taken from breast or thigh, cut into small pieces

- 1 tablespoon water

- 1 teaspoon soy sauce

- 2 teaspoons of Tai Ky cornstarch

- 1 tablespoon vegetable oil and 6 cups other oil for frying

- 1 medium onion, diced

- 2 cups bean sprouts

- 6 large eggs

- ¼ teaspoon sesame oil

- 1 green onion, chopped

Sesame seeds (optional)

Ingredients for the sauce

- 1 tablespoon of cooking oil

- 1 tablespoon flour

- ½ teaspoon of turmeric powder

- ½ teaspoon of chili powder

1/8 teaspoon of garlic powder

- 1/8 teaspoon onion powder

- 3 cups chicken broth

- 2 teaspoons soy sauce

- 1 tablespoon oyster oil

- ½ teaspoon sesame oil

- Ground white pepper

- ¼ cup cornstarch

- Salt


How to make chicken fried eggs

Step 1:

- Mix the chicken with 1 tablespoon of water and let the chicken soak up this water. Add 1 teaspoon cornstarch and 1 teaspoon soy sauce and mix well with the chicken. Done set aside.

Step 2:

In a medium saucepan, add 1 tablespoon of oil and heat. Add 1 tablespoon of flour and stir for 15-20 seconds. Add chili powder, turmeric powder, garlic powder, onion powder and stir well for 15 seconds. Then add in chicken broth.


Step 3:

- Bring the mixture above and cook over low heat. Add soy sauce, oyster oil, sesame oil, and ground white pepper to taste. Cook the broth a little thick to make the sauce.

- Slowly add the cornstarch and stir well to dissolve. Let's cook another 30 seconds. You can add more cornstarch if the sauce is not comparable enough.


Step 4:

- Heat 1 tablespoon of oil in a pan and add the marinated chicken. Stir fry for 2 minutes so the chicken is slightly cooked, then pour back into the bowl and set aside.


Step 5:

- In a saucepan a pot with a deep bottom, add 6 cups of cooking oil. Oil temperature should be at 176 degrees C. It is best if you can use a thermometer to check because the oil too hot will cause the egg to burn, low oil temperature makes the eggs not stick together.

Step 6:

- While waiting for the oil to heat, add the cooled chicken, diced onion and bean sprouts to the mixing bowl. Add eggs, sesame oil and 1 teaspoon of cornstarch. Remember not to add any seasoning to this mixture as your eggs will not clump together when frying. Then mix it all together.


Step 7:

- Use a large spoon to quickly scoop about 3 spoons and place in the frying pan for the first turn. You can also take 2 spoons if the pan size is small. The skill is that you tilt and pour this mixture slowly from the edge of the pan, it will flow and spread towards the center.


Step 8:

- Fry whole pieces for up to 40 seconds. You can use a spoon to pour hot oil over it to make the chicken quicker. When each piece turns crispy yellow, we're done. Remove and place on a mesh sieve to remove excess oil. Continue working until the rest of the mixture is over.


Step 9:

- Put the pieces of chicken fried eggs on the plate. Pour over a little sauce mixed with green onions, sesame seeds to decorate. Enjoy with hot rice right away!
