(1) Rinse the bones of the stew, boil them in boiling water to deodorize them, then place them in the stew pot over low heat for a few hours. Take care not to let the pot of water stew out of water too quickly because of a big fire, or stew too long. Add water as needed.
(2) 200g of remaining ground meat is marinated with salt sauce, spices to taste, add some chopped fresh onions to mix, members into small balls.
(3) After the boner has reached, remove the froth or fat floating to make the broth clear, then put the meatballs to boil on high heat for about 5 minutes and then turn off the heat.
(4) Add a spoon of fish sauce, 1/3 teaspoon of salt, 1/3 teaspoon of sugar, squeeze a little lemon juice (spice may be suitable for taste but should not be too salty to eat both bread and have may slurry sauce).
The final step is to mince the garlic and chili and put into the pot of sauce. So you have completed a very special duck dipping sauce only available in the city of red phoenix flowers.
* How to make steamed rice cake
(1) Processing raw materials
- Wash meat with clean water, put in a small blender. If you don't have a blender you can really shred it.
- Soak the eardrum in hot water so that the eardrum enlarges fully, remove the stem, then rinse several times with clean water. Chop and chop wood ear mushrooms.
- Peeled shallots (can be washed with water), then minced.
(2) Wash the banana leaves, boil in boiling water for a few minutes to remove the plastic leaves. Pour the boiled water away and wash the leaves again with clean water again.
The way to boil the banana leaves is applied when you have a special rectangular cake mold of Hai Phong.
In case you do not have a mold, you can skip the boiling step instead of taking the leaf through the fire to soften the leaf and folding it into a boat shape as shown below. (Do not make black leaves but still have to keep the original green, otherwise will affect the taste of the cake).
(3) Chop finely chopped onion with a little oil for aroma, then stir fry meat and wood ear, stir-fry, seasoning to taste (so light, a little normal because when you eat bread, you still use it with sauce), sauté meat until cooked.
(4) Mix rice flour with 500 ml of warm water, stir well to dissolve to form a water-like mixture. The consistency of the flour - water mixture will determine the softness of the cake. Should dilute to melt in the mouth immediately when eating.
(5) Arrange the banana leaf mold into the upper layer of the steamer, pour the mixture of duckweed to nearly each prepared banana leaf mold, continue to pour on top.
All the preparation is now complete, so let's start steaming.
(5) Steamed steamed rice cake
Pour water into the lower layer of the steamer, bring to boil water and lower the heat.
Place the upper layer of the steamer, cover the lid and steam for 20-30 minutes. In the process of steaming, sometimes open the lid to wipe off the water standing on the lid, the cake will be better if there is no small water back on the cake.
Hai Phong steamed rice cake when eating soft but not crushed, bite into it gradually dissolves in the mouth. When combined with the sweet dipping sauce from the stew, add the sourness of lemon juice, the spicy of chili and pepper, ... together with chopped raw vegetables to create a unique duckweed flavor only found in Hai Phong.
