-250g gizzard
-4 tbsp Taky crispy fry mix

How to make fried gizzard:
Step 1:
- You add gizzard in half along the middle line. Can be made into smaller pieces if gizzard sizes are large. Cut off any remaining fat and muscle from the gizzard so that they don't splash the fat when frying.
Step 2:
- Rinse and drain gizzards.
Step 3:
- Mix 4 tbsp of crispy fry mix with 3 tbsp of wheat flour, 1 tbsp of glutinous rice flour, ¼ teaspoon of salt, 1 large egg, 1 pinch of baking soda in a large bowl. When you combine these ingredients together, the batter looks dry, but when you combine them with a damp chicken gizzard and olive oil, it will be moist enough.
Step 4:
- You mix gizzard with olive oil and then mix 1 tablespoon of flour to coat.
Step 5:
- Add gizzard in the flour mixture in step 3 and mix well.
Step 6:
- Heat a pan with about 3 cups of cooking oil for hot oil.
Step 7:
- You drop the gizzard into the pan, use 2 wooden spoons to gently stir the gizzards do not stick together and bloom evenly. You fry for about 10 minutes over high heat until the gizzard turns golden brown.
Step 8:
- Mixing dipping sauce:
